Ingredients:
- 1/2 lb ground beef (90% lean or leaner)
- 1 tsp olive oil
- 1/2 small red onion, diced
- 1 clove garlic, minced
- 1/2 small zucchini, diced
- 1/2 red bell pepper, diced
- 1/4 cup cherry tomatoes, halved
- 1/8 cup Kalamata olives, sliced
- 1/2 tsp dried oregano
- 1/4 tsp smoked paprika
- 1/4 tsp ground cumin
- 1/8 tsp red pepper flakes (optional)
- Salt & black pepper to taste
- 1 tbsp crumbled feta cheese
- 1 tsp lemon juice
- 1 tbsp fresh parsley, chopped
Instructions:
Heat the olive oil in a large skillet or wok over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
Add the onion and garlic to the skillet and cook for 2-3 minutes, until softened.
Add the zucchini, bell pepper, tomatoes, olives, oregano, paprika, cumin, and red pepper flakes (if using). Season with salt and pepper to taste.
Cook for 5-7 minutes, until the vegetables are tender-crisp.
Stir in the feta cheese, lemon juice, and parsley. Serve immediately.
