Ingredients:
- 1 cup rolled oats
- 1 cup unsweetened almond milk (or milk of choice)
- 1 apple, chopped
- 1 banana, sliced
- 3 eggs
- 1/4 cup chopped walnuts
- 1 teaspoon vanilla extract
- Pinch of cinnamon (optional)
- Sweetener to taste (optional, such as stevia or monk fruit)
Equipment:
- 8×8 baking dish
- Mixing bowl
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine oats, almond milk, chopped apple, sliced banana, eggs, walnuts, vanilla extract, and cinnamon (if using).
- If using a sweetener, add to taste and mix well.
- Pour the mixture into the prepared baking dish.
- Bake for 30-35 minutes, or until set and lightly browned.
