Ingredients:

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 apple, chopped
  • 1 banana, sliced
  • 3 eggs
  • 1/4 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • Pinch of cinnamon (optional)
  • Sweetener to taste (optional, such as stevia or monk fruit)

Equipment:

  • 8×8 baking dish
  • Mixing bowl

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine oats, almond milk, chopped apple, sliced banana, eggs, walnuts, vanilla extract, and cinnamon (if using).
  3. If using a sweetener, add to taste and mix well.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 30-35 minutes, or until set and lightly browned.
