Ingredients:

  • 1 large low-carb tortilla (or a whole wheat tortilla)
  • 1/2 cup low-fat mozzarella cheese (shredded)
  • 1/4 cup pepperoni slices (you can use turkey pepperoni for a healthier option)
  • 1/4 cup marinara sauce (look for a low-sugar option)
  • 1 teaspoon Italian seasoning (optional)
  • Cooking spray or olive oil (for greasing)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare the Tortilla:
    Lay the tortilla flat on a clean surface. If you want, you can lightly spray it with cooking spray or brush a little olive oil on one side for extra flavor.
  3. Add the Cheese:
    Sprinkle half of the mozzarella cheese evenly over the tortilla, leaving a small border around the edges.
  4. Layer the Toppings:
    Place the pepperoni slices over the cheese. If you’re using Italian seasoning, sprinkle it over the pepperoni. Then, add the remaining mozzarella cheese on top.
  5. Roll It Up:
    Starting from one edge, carefully roll the tortilla tightly into a cylinder shape. Make sure to keep the filling inside as you roll.
  6. Secure the Roll:
    You can use toothpicks to hold the roll together if needed, but it should stay intact when placed seam-side down.
  7. Bake:
    Place the roll on a baking sheet lined with parchment paper or lightly greased. Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and the tortilla is golden.
  8. Slice and Serve:
    Once done, remove from the oven and let it cool for a minute. Slice the roll into bite-sized pieces. Serve with a small bowl of marinara sauce for dipping.
